With Tuscan Sweet & Sour Cabbage

Ingredients:
2 lbs Lean Pork Loin
1 Tbls. Black Pepper
1 Tbls. Fennel Seed
1 Tbls. Kosher Salt
Place pork loin in roasting pan &
season.
Roast for 1 hour at 375 degrees.
Sweet & Sour Cabbage
2 Tbls. Olive Oil
1 Cabbage Head @ 1.5 lbs. Sliced Thin
1 Medium Size Onion Sliced
2 Strips Bacon Cut Thin Strips
2 Tbls. Sugar
1 Cup White Wine
1 Cup Chicken Stock
¼ Cup Vinegar
Salt & Pepper to Taste
Heat pan. Add olive oil and
thin strips of bacon. Sauté for a few minutes then add onions &
cook till translucent. Add sugar and cabbage. Deglace with white wine.
Season with salt & pepper. Add chicken stock & vinegar and cook
for 20 minutes.
